Bracknell & Wokingham Hospitality and Catering students visit Lainston House

Recently, Bracknell and Wokingham Hospitality and Catering Apprentices had the privilege of visiting Lainston House in Sparsholt near Winchester. Sister hotel to Pennyhill Park in Basingstoke and The Royal Berkshire hotel in Ascot plus two other hotels in the area.

Andy Mackenzie, Executive Chef to the Chefs’ Academy played host to the apprentices. The day started with Hugh Judd from the Agriculture & Horticulture Development Board who gave a talk about his work and a presentation on the Meat and Education programme, which is a joint initiative and online qualification, www.meatandeducation.com.

We were then joined by Jack Cook from Walter Rose and Son, demonstrating to the apprentices how to correctly butcher a whole lamb, followed by Andy Mackenzie giving a master class on how to prepare cannon of lamb using the “Sous Vide” method of cooking. The College Apprentices had the opportunity to get involved in the whole process and even to enjoy eating their hard work along with all the trimmings.

The day completed with an insightful look at the Exclusives Chefs’ Academy designed to develop the talent and passion of the chefs of the future.

Michal Bilut one of the apprentices said “he found the whole day very interesting and that he had learnt a lot. He also said that it was great fun”.

Ross Carne Course Lead said “it was a great to see the enthusiasm and for the apprentices to have the chance to develop their skills whilst being taught by a very talented chef”.
