Waitrose chefs show the way

Bracknell & Wokingham College’s Hospitality students recently benefited from a visit by two of Waitrose’s best chefs.

Head Chef Daniel Wellz and Chef Allen Frost demonstrated various baking and pastry recipes, before letting the students have a go themselves.

“Cooking is a great industry to be involved in and it’s a passionate job. We want to convey that passion to these students and to teach them about best, and correct, practices in a real working environment,” said Allen Frost.

Allen worked with some of the students at Waitrose in Bracknell during their two weeks work experience:

“With work experience, you make sure that they get a real taste of what the working environment is like. And today we hope to build on that experience.”

Wanting to pass on their own industry knowledge in a familiar setting for the students, Allen and Daniel were able to provide more of a one-to-one session where they could concentrate on the students and their questions, at the college.

Waitrose Head Chef, Daniel Wellz, has previously visited Bracknell & Wokingham College giving demonstrations in basic knife techniques for poultry and butchery:

“We’ve been showing the students some pastry techniques today – choux pastry, suet pastry and also a good chocolate brownie recipe for a bit of fun.

“Ultimately, we hope that the students will take some of our industry knowledge away with them today which may help them with their own career choices.”

Hospitality student Yasmin Hughes enjoyed the session and was looking forward to trying out the chocolate brownie recipe at home:

“This has been a really useful lesson for us as we’ve not made our own pastry before; and it’ll be a useful skill to have for becoming a chef. They’ve shown us that making your own pastry is easier than you would think.”

Study Support Assistant Jackie O’Connor, oversaw the lesson and highlighted the importance of the visit:

“By bringing industry experts like Daniel and Allen into the classroom, the students gain opportunities to make contacts and to find out how things are done in the real world of work - and in the industry that they want to go into.”
